These limits determine the amount of text the models can process, with one token roughly equating to 0.75 words. Or one token equalling about four characters. If you don't see the AI system that you are using, no worries, just select one with the approximate token (character) limit.

The maximum specified is to allow the AI system (e.g. ChatGPT) to have available context to chat with you and answer your questions.

unlimited is used to override the practical limits on chat package sizing. There is no "unlimited" AI system.
